Looking for a rock solid platform, as I'm used to near 100% availability, NginX front end with lightning speed, and a support team that does not only responds but actually cares for their customers.
Considering Eleven2, Site5, Godaddy...
Any suggestions?

In my experience, "caring" usually comes as a result of taking the time to build a relationship with the folks you're working with. When you talk to them a lot on the phone, hang out with them at conferences, etc.
I'd recommend starting with a company that offers managed VPS accounts, then do your google homework and see which ones have positive feedback (from lots of places) on their customer support. Once there, aim for the mid-size host. One that's small enough to build a relationship with but not so small that they can't take care of you consistently.

And thanks for the suggestion about KnownHost, seems very good, although a little expensive, and would need some extras, like WHM/cPanel, but I guess that coming from shared reseller, a good VPS would be in fact a big difference.
More suggestions?
