simplify customer email transfer to my reseller

just a breakdown: I have the cpanel account on my server setup with several emails, the domain name I am working with is abc123.com (there are also other domains with that account) this domain is with DIRECTNIC and the hosting with anothercompany. I am having trouble understanding the correct steps to insure 0 down time. I need really basic step on what to get and how to do the transfer of the emails before i change the name server from DIRECTNIC. I don't understand how MX entry works and don't know what I need and where to put it...or if there is another good method?

Why you dont simple set the whole domain to cPanel account by changing the name servers?
