Setting up cPanel to exchange mail remotely?

A friend of mine who owns my server with me is concerned about our backend IP showing up in email headers and various other MX entries. I have looked into this issue and noticed that cPanel/WHM has an option to exchange mail remotely. Can this be done via a service like google apps or Amazon SES? (he has an AWS SES account and I have a google apps account). I for one am lost when it comes to mail configurations (which is why ours is so basic). Does anyone here have any suggestions? Thanks!

yes, it can be done through cPanel, you can use Google Apps for your domain to use google mail server, you just need to follow below steps: 1. Register with Google Apps 2. Set Google MX to your domain 3. Set your domain as Remote Domain [mail]on to the server[take help from your hosting provider for it]
