Opinion: Security/Stability of Dedicated vs VPS

Could some members on here post your opinions on the expected stability and security of dedicated server vs a VPS. I have a couple of ecommerce sites and I really don't need dedicated, but I can afford one if there is much advantage in terms of security and stability (I know speed issues have been discussed ad nauseum).
My thinking is that in a shared or vps environment there is more potential for hardware and software failure but have nothing to base it on.

Your standard shared hosting is most affected by 1 and 3. Although #3 is generally managed well since they're more likely to have dedicated admins than you do.
A VPS adds #2 into the mix as you now have to contend with the admin aspects of managing your own memory use. OpenVZ can be fickle at times if you're using Java or anything that's greedy in terms of ram. Generally, you don't see this in shared hosting environments since they avoid the issue altogether by saying no. You're also more susceptible to #3 since you no longer can rely on the provider's expertise (unless you buy a managed service).
Dedis give you control back for #1. No neighbors can have a dramatic impact, but really, that's just speed. #2 and #3 still exists as per VPS.
It really comes down to whether you can absorb the admin prices. Hardware and software-wise, it's going to be all the same.
