We want to create a few Windows virtual servers with their own kernel and we should be able to easily backup the virtual servers and should be able to restore from the backups should any disaster occur.

Vmware is of course better and rock solid product.

Is there any URL where there is a comparison between these three products?

I would kive props to VMWare for stability and performance. However, that usually comes at a cost. Citrix works pretty well, but I have found it to be slightly less stable. I've never tried paralels baremetal.

I would recommend parallels bare metal. Good interface for clients. And its stable enough.

xenserver should be in the running. Its rock solid. I don't know how much compared to vmware but I think its also faster (at least from what read). It isn't as flexible for sure but if you're doing windows then it has excellent support. The PV drivers that comes with it keeps windows running smoothly. I think on opensource xen, windows isn't as stable (from my experience). Plus xenserver wins in the pricing (free) if thats what you're looking for. There are some free scripts you can find on the web which allows you to snapshot the VMs and then backup automatically to an NFS share. It works for us. Consider it.
