Question regards to sudo (sudoers) root; I have created a user with access to the server user ALL=/bin/su Is it safe to remove root ALL=(ALL) ALL

There is no need to remove the "root" line. If you restrict a user to specific commands in sudoers file, he won't be able to execute anything extra.

You don't have to remove the root lines from the sudoers file, juts keep it there.

I would also suggest to not play with the root line. I think there is nothing to worry if this line exists in your sudeor file
