is it a requirement to be an official LLC to use Paysystems or something similar?

With Paysystems I know it at least takes a business license, yes.

You won't need an LLC, however, as CrazyTech stated you will need a form of business registration/license. LLC is a type of registration, and if you wanted to go the cheapy route you can simply register a sole proprietorship - depending on your area, should cost less than $100.

what are some good pay systems that don't require it? is 2checkout good stuff?

I'm fairly particular that any 3rd party processor (other than PayPal) will require - at the bare minimum - for you to have your company registered in some way, shape or form.
