Combining /var/log/$foo

So I finally have a pair of colo'd CentOS 5.0 cPanel boxes up again at NAC, after a year of utilizing a reseller and running my personal website in-house via four CentOS servers with no User Interface whatsoever. I was positive I'd done this before with a cPanel box from the past, and once at a previous job on Debian Sarge, but how the h@ll do I go about setting up a /var/log/all.log? Or at least something where I can watch /log/messages, /exim_mainlog, /secure and the httpd logs. Can someone re-advise me?

So there's a couple of ways you can do this. You can just mess with syslog to have it log everything to one file (either only to it, or still doing it to where it was before PLUS send it all to one file). For info on that, 'man syslog.conf'. The other option is that you actually watch multiple log files at once. For that, look at 'multitail'.
